Building a Better Grape
Six years ago, I set out on a path to grow the perfect grape – not only taste good, but be very good for you, high in phenolic content and restorative to the body. And in the process, I found regenerative viticulture, farming grapes without the use of herbicides or pesticides but rather focusing on the soil by rebuilding organic matter and restoring degraded soil biodiversity. This may sound like the same old organic farming story, but it is much more. With this process, we focus on restoring the soil, to actually rebuild organic carbon, improve the water cycle, and yes, even increase resistance to climate change.
